ESXi hosts limit the memory resource use to the maximum amount useful for the virtual machine, so that you can accept the default of Unlimited memory resources. If 4 sticks are installed, but one of the sticks is completely reserved by the BIOS (Hardware Reserved), it means you have dual channel RAM and one of the sticks isn't functioning correctly.
